Delicious and crispy Oven Baked Chicken Taquitos filled with tender chicken and rich flavors, perfect for cozy gatherings.
Ingredients
- 2 cups cooked, shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced bell peppers
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 small flour or corn tortillas
- Cooking spray for baking
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix the shredded chicken, cheese, bell peppers, cilantro, cumin, garlic powder, salt, and pepper in a large bowl.
- Microwave the tortillas for about 30 seconds to make them pliable.
- Take about 2 tablespoons of the chicken mixture and place it at one end of a tortilla. Roll it up tightly.
- Spray the tops of the taquitos with cooking spray and bake for about 20-25 minutes, or until golden brown and crispy.
- Let the taquitos cool for a few minutes before serving with salsa, guacamole, or sour cream.
Notes
Use leftover chicken to make these taquitos even easier. Avoid overfilling the tortillas to prevent them from bursting.
